Coconut Curry Soup

Kyle and I made this tonight for dinner, I was first impressed that it was a really good curry and could be made with ingredients that most people are likely to have in their homes (rather than some of the other curries that Kyle and I like to make on a normal basis). We felt though that there were some ingredients missing (aka garlic, ginger, carrots, and potatoes), so we threw them in. That's one thing that I love about curries is that you can throw a lot of different vegetables in and it tastes delicious (I had never put red peppers in my curry before but LOVED IT!). I loved how simple this recipe was and how quickly it came together.

Coconut Curry Soup

2 tablespoons olive oil
1 1/2 pounds chicken breasts, (about 3), cut into 1-inch (or smaller) pieces
Salt and pepper for seasoning
1/2 cup chopped yellow onion (about 1/2 medium onion)
1 red bell pepper, finely chopped
2 cups low-sodium chicken broth
1 can (14-ounces) unsweetened light coconut milk
1/8 teaspoon cayenne pepper or more to taste
1 tablespoon brown sugar
½ tablespoon curry powder
1 tablespoon fresh lime juice (about 1 medium lime)

¼ cup fresh cilantro

3-4 cups hot, cooked rice for serving

In a large pot, heat the oil over medium heat until it is hot and shimmering. Pat the chicken pieces dry with a paper towel and season them lightly with salt and pepper. Add them to the hot oil. Let the chicken cook for 1-2 minutes, stirring occasionally. Add the onions and red pepper. Cook for 2-3 minutes, until the onions and peppers are slightly softened. The chicken and vegetables don’t have to be fully cooked as they will simmer and cook further in the next step.

Add the chicken broth, coconut milk, cayenne pepper, brown sugar, and curry powder. Stir to combine. Bring the soup to a simmer and cook, gently, for 10-15 minutes. Stir in the lime juice and cilantro. Add salt and pepper to taste.

Serve a ladle or two of the soup over a scoop of rice and garnish with more cilantro, if desired.

BBQ Chicken Sandwich

This was really delicious, I'm not usually a fan of BBQ sauce but in this recipe it was perfect giving a little bit of added flavor without being over the top. Mom and I thought that
a whole chicken breast was a little too much and that next time we would use the chicken tenders instead. We loved the different flavors together and thought it tasted like a quick/easy version of Chicken Cordon Bleu.

BBQ Chicken Sandwich

Ingredients:
4 boneless skinless chicken breasts halves
¼ cup BBQ sauce
8 slices bacon
8 slices Swiss cheese
2 large tomatoes (sliced)
lettuce
8 slices sour dough bread (to toasted)
½ cup ranch dressing
1 small avocado (peeled, pitted, and sliced)

Cooking Directions
Step 1: Pre-heat the oven to 375 degrees. Spray a baking sheet with cooking spray. Brush both sides of the chicken breasts with bbq sauce and place onto the baking sheet. Top each chicken breast with 2 slices of bacon.
Step 2: Bake chicken breasts for 25 minutes or until the internal temperature has reached 165 degrees. During the last couple minutes of cooking top each chicken breast with 2 slices of Swiss cheese and allow it to melt. Remove from the oven. While chicken is cooking in a food processor blend together ranch dressing and diced avocado. Set aside.Step 3: Lay down one slice of sour dough bread. Top with lettuce and 2 slices of tomato. Top the tomato with a chicken breast. Spread avocado ranch dressing onto the bottom of the top slice of bread. Place on top of the sandwich.(Makes 4 Servings)

Roasted Potato Tacos

This is by far one of the best recipes that I have tried in a long time and it has quickly made it to the top as a favorite recipe. The recipe is actually vegetarian based but Mom felt that it should have some form of protein in it so we just cooked up the couple strips of bacon that we had and put it on top...so, so, so good (the house smelled simply divine as it was cooking--we even cooked it in the toaster oven rather than heat the regular oven)! We didn't have the other stuff to do the dressing to with it so we just used sour cream, I can't wait to try real dressing.


Roasted Potato Tacos

4-5 Red Potatoes, coarse chopped
1/2 Red Bell Pepper, coarse chopped
1/2 medium sized Onion, coarse chopped
1/2 teaspoon Kosher Salt
1 teaspoon ground Cumin
1/2 teaspoon Chili Powder
1/2 teaspoon dried Oregano
1 tablespoon Vegetable Oil
Tortillas
Lime wedges, for garnish
Dressing

Preheat oven to 420 degrees. Combine potatoes, bell pepper, onion, salt, cumin, chili powder, oregano, and oil. Toss until potatoes and other vegetables are well coated in oil and spices. Spread the mixture out on a baking sheet and place on the middle rack in the oven. Cook for 30-40 minutes, or until potatoes are tender and browned. Spread the mixture on tortillas and top with a spoonful of dressing (recipe below). Serve with fresh lime wedges.


Dressing
2 tablespoons Sour Cream
1 tablespoon Mayonnaise
1 tablespoon fresh Goat Cheese
1 clove Garlic
1 teaspoon diced Jalapeno
1/2 teaspoon fresh Lime Juice

Combine all the ingredients in a bowl and whisk until smooth.

Chicken Ranch Wraps

When I saw these they looked and sounded so yummy! I dipped and battered all of the chicken when Mom and I decided that we wanted to make these more healthy and not deep fry them, instead bake them. These were so delicious! I baked these at 350*F for about 15 minutes on each side I believe. I also added some BBQ sauce with the ranch dressing. I may try these fried next time but I loved them this way.

Chicken Ranch Wraps

Ingredients:

1 lb Chicken (cut into strips)
1 cup Flour
1 1/4 teaspoons Seasoning Salt {such as Mrs. Dash}, divided
1/2 teaspoon Black Pepper
1/2 teaspoons Garlic Powder
2 Eggs
3 tablespoons Milk

oil for frying, such as vegetable or peanut oil

For the Wraps
2 Roma Tomatoes
4 large leafs Lettuce
Ranch Dressing
Cheese
6 medium Flour Tortillas {8 inch}

Directions:

Pour frying oil into a deep skillet until half way full. Preheat to 350-375 degrees {around medium heat}.

Using two shallow dishes, prepare dredging station: fill one with flour, 1 teaspoon seasoning salt, pepper and garlic powder and the other with eggs, milk and remaining 1/4 teaspoon seasoning salt. Mix both.

Slice chicken breasts into thin strips. Place chicken into flour mixture to coat. Remove from flour, shaking off any excess and coat in egg. Place back into the flour for a second coat. Shake off any excess flour and place into hot oil to fry. Try not to over crowd the pan! You may have to do two or three batches. {Remember: If you put chicken into the oil and nothing happens, its too cold. If you put chicken into the oil and it sizzles violently, it’s too hot. You need to find a happy medium between those two for frying.} Fry chicken 3-4 minutes per side or until golden in color. Remove onto paper towels to drain. Sprinkle with some salt. Store in warm oven until ready to eat.

To assemble the wraps, place chicken pieces onto a tortilla. Top with lettuce, tomato and ranch dressing. Roll and eat!

Copycat Cafe Rio Sweet Barbacoa Pork Salad

I'm now hooked on Cafe Rio salads too...I'm not sure what I'm going to do when I go there again! At least I know how to make the dressing and it's really easy (and not that expensive either!), I'll probably start putting that on my other salads from now :)

6 large Tortillas
Shredded cheese, Mexican blend
Lettuce (NOT iceberg, use leafy green or Romaine)
Diced tomato, onion, and cilantro (pico de gallo)
Sour cream
Cotija cheese, crumbled (or you can use Parmesan)

Here is how we put it all together: First of all, we bought the aluminum deep-dish pans (they had these at the grocery store, you will know when you see them.. they look JUST like the Cafe Rio tins). Lay a tortilla in the bottom of the pan, sprinkle cheese on it, and put in the oven at 375 for about 5 min or until the cheese is melted. Remove from oven, add beans, rice, pork, then lettuce and a little scoop of diced tomato and onions (pico de gallo). Add guacamole (HIGHLY RECOMMENDED) and sour cream. Add crushed tortilla chips, a shake of Parmesan cheese, and top with a few cilantro leaves. Serve with the cilantro ranch or vinaigrette dressing and there you have it! (makes about 6 salads)

Copycat Cafe Rio Cilantro-Lime Rice

Another new recipe! Last time we had rice with our burritos but this time I decided to add the yummy rice like they have at Cafe Rio...super good and easy. We used the rice cooker but I'm sure it would still be super easy on the stove top.

1 c. uncooked rice (long-grain, white rice)
1 tsp. butter or margarine
2 cloves garlic, minced
1 tsp. freshly squeezed lime juice
1 can (15 oz) chicken broth
1 cup water
1 Tbsp. freshly squeezed lime juice
2 tsp. sugar
3 tablespoons fresh chopped cilantro

In a saucepan combine rice, butter, garlic, 1 tsp. lime, chicken broth and water. Bring to a boil. Cover and cook on low 15-20 minutes, until rice is tender. Remove from heat. In a small bowl combine lime juice, sugar and cilantro. Pour over hot cooked rice and mix in as you fluff the rice.

Copycat Zupas Honey Bacon Club

Sorry again with the copycat recipes but when I think of something that I like I try and ether find a recipe copying it or re-create it myself. I'm learning that I like Muenster Cheese and will probably using it in more things soon! This was super yummy and I may or may not be having it for lunch tomorrow :)


Copycat Zupas Honey Bacon Club

Original Sandwich

Bagel or other kind of Bread
Turkey Lunch Meat (used Oven Roasted Honey Turkey)
Cooked Bacon (used Turkey Bacon)
Muenster Cheese
Honey Mustard
Sliced Tomatoes
Sliced Onions

Spread mustard on bread, pile with desired fillings and then grill on sandwich cooker, panini grill, stove top, or George Forman until cheese is melted and everything is warm and yummy!



Copycat Cafe Rio Sweet Barbacoa Pork


Cafe Rio, Costa Vida, etc. if you haven't tried it you're missing out. I made this copycat version back in January for my roommates and it was super yummy. It takes some time so if you are planning on making it remember to think about it a day or two before you want to eat it (or just go to Cafe Rio :D). I'm making it again this week...can't wait (my mouth is just salivating thinking about it)!

Copycat Cafe Rio Sweet Barbacoa Pork

2 pounds pork (we use boneless pork rib meat)

3 cans Coke or Root Beer (NOT diet)

1/4 c. brown sugar

dash garlic salt

1/4 c. water

1 can sliced green chilies

3/4 can enchilada sauce (I use Old El Paso brand, medium spiciness but any will work)

1 c. brown sugar

Put the pork in a heavy duty ziploc bag to marinade. Add about a can and a half of coke and about 1/4 c. of brown sugar. Marinade for a few hours or overnight.

Drain marinade and put pork, 1/2 can of coke, water, and garlic salt in crock pot on high for about 3-4 hours (or until it shreds easily, but don't let it get TOO dry) or on low for 8 hours. Remove pork from crock pot and drain any liquid left in the pot. Shred pork.

In a food processor or blender, blend 1/2 can Coke, chilies, enchilada sauce and remaining brown sugar (about a cup, you can add a little more or less to taste..). If it looks too thick, add more Coke little by little.

Put shredded pork and sauce in crockpot and cook on low for 2 hours. That's it!
Serve as meat for burritos, salads, nachos, enchiladas, quesadillas, etc.

Copycat JDawg Sauce

Erin has been telling me for the longest time that I need to go with her and try JDawgs in Provo. I was struggling a little bit with the idea of spending $3-$4 for a hot dog, but she assured me that it wasn't just the hot dog but their special sauce. I still haven't actually been to JDawgs (despite the fact that it was only a block and a half from my apartment) but when I saw this copycat version of it I knew that I had to try it. It was good...I still don't think that it's worth the money that they charge-but hey I now have a recipe I don't have to!

3/4 C ketchup
3/4 C barbeque sauce
1/4 C honey
1 tsp apple cider vinegar
1 tsp soy sauce
1/2 tsp onion power
Mix together and enjoy!

Cranberry-Orange Chicken Salad

I showed this recipe to Mom and she just knew that this is what she wanted to make for our dinner on Sunday, we had about 30 people so had to 5x the recipe. It went over very well as we had only about a cup left of salad mix by the end of the night. We just cheated and bought Costco rolls to serve with the salad, some people made it into a sandwich and others just ate it plain (I've been using it for a wrap filling too!). It was really good, I wasn't so sure at first with the cranberry sauce, but it adds a great twist to the salad.

Cranberry-Orange Chicken Salad

2 cups cooked chicken, chopped into bite size
1 cup celery
1/3 cup chopped green onions
Zest of 1 medium orange
1/2 cup craisens
1/2 cup light mayo
1 teaspoon spicy brown mustard or coarse grain mustard
2 tablespoons jellied cranberry sauce
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup chopped pecans or walnuts
Croissants or rolls
lettuce leaves

1. In a medium bowl, combine chicken, celery, green onions, orange zest and craisins.
2. In a separate, smaller bowl whisk together mayo, mustard, cranberry sauce, salt and black pepper. Add the chicken mixture and toss to fully combine. *This salad is best if refrigerated for several hours before serving.
3. Just before serving, add the toasted pecans/walnuts. Serve on toasted buns (with a touch more mayo if desired)and with a leaf of lettuce.

* Combine this with fruit salad and some veggies for dipping and you are set!

Honey Lime Chicken Enchiladas

These were my first enchiladas...ever! They were so so delicious! I thought that the chicken was a little dry so the only changes I would make was to have doubled the amount for the marinade. I also didn't have extra marinade at the end like it said I was supposed to, so I just threw some more honey and lime in with the heavy cream and green enchilada sauce. I liked that this recipe was so simple but still had so many flavors.

Honey Lime Chicken Enchiladas

1/3 cup Honey
1/4 cup Lime Juice
1 Tablespoon Chili Powder
1/2 teaspoon Garlic Powder
1 pound Chicken, cooked and shredded
8-10 flour Tortillas
1 pound Monterey Jack Cheese, shredded
2 (10 oz) cans Green Enchilada Sauce
1/2 cup Heavy Cream

Preheat oven to 350 degrees.

Mix the honey (their tip: spray your measuring spoon with cooking spray before measuring out the honey), lime juice, chili powder and garlic together and toss with the shredded chicken. Let it marinate for at least 1/2 hour (or toss together in aZiploc bag and let it sit in the fridge for a few hours).

Spray a 9X13 pan and a 9X9 pan with cooking spray. Pour enough enchilada sauce on the bottom of each baking pan to create a thin layer on the bottom. Fill flour tortillas with chicken and shredded cheese, saving about 1 cup of cheese to sprinkle on top of enchiladas.

Mix the remaining enchilada sauce with the cream and leftover marinade (you might not need to use all of the enchilada sauce depending on how saucy you like yours). Pour sauce on top of the enchiladas and sprinkle with cheese.

Bake at 350 degrees for 30 minutes until brown and crispy on top. I served mine with sour cream, pico de gallo, rice and black beans.

Crustless Quiche

For Easter Mom and I volunteered to make dinner and take it down to my Grandma's. My Grandma is Celiac or more simply put she can't have Gluten. When trying to decide what to make we wanted to have something rather simple but still a little on the nicer side than just a normal Sunday afternoon sandwich. We decided to on a Crustless Quiche, and to make it a little more special we did them individually in the muffin tins. A quiche recipe is kind of basic and then what you add is where it becomes more exotic, so have fun with your additional ingredients.

Crustless Quiche

Ingredients

Custard: 2 cups Half-and-Half (we used 1 cup Whipping Cream and 1 cup Skim Milk)
3 Eggs
1/2 teaspoon Salt
Pepper
Nutmeg
Red Pepper

Fillings:
2 to 3 cups Veggies (we used onions and red peppers)
4 ounces (or about 1 cup) grated Cheese
1 to 4 tablespoons minced herbs (such as parsley, chives, tarragon, basil, dill, rosemary, etc.)
3 /4 cup chopped Bacon or Ham

Directions

Preheat oven to 350 degrees F. If doing mini quiches fill cups with cake liners or spray with cooking spray.

Whisk the half-and-half, eggs and yolks in large glass measuring cup. Season with salt, pepper, and nutmeg, cayenne or paprika to taste. Spread half the desired filling evenly in the pan, top with about half the cheese; repeat with remaining filling and cheese. Pour the custard over the fillings. Top with more herbs or cheese as desired.

Bake until the quiche is just set in the center, about 40 to 50 minutes. Cool completely on a rack before serving.

Empanadas de Horno

This is one of the recipes that I grew up eating, it was something that wasn't too hard for my Mom to make and they weren't too messy so we could take them on road-trips with us. The original recipe that my Mom sent includes the directions to make your own crust, I was feeling lazy and was a little low on time so I cheated and used store-bought pie crust. Feel free to do whatever suits your needs. I also grew with my Mom using ground beef instead of the steak, I didn't have ground beef so finished up the package of ground turkey from the freezer. My roommates do not like raisins so those were not included, neither was the hontaka chili.

1/2 cup finely chopped onion
1 tablespoon olive oil
1/2 cup water
1/2 pound boneless beef sirloin steak , cut into 1/4-inch cubes
2 tablespoons seedless raisins , soaked in 1 cup boiling water for 10 minutes and drained thoroughly
1 teaspoon dried hontaka chili , seeded and crumbled, or 2 small pequin chilies, crumbled
1/2 teaspoon paprika
1/4 teaspoon cumin
1/2 teaspoon salt
freshly ground black pepper
2 cups all-purpose flour
1 teaspoon salt
1/4 pound plus 2 tablespoons butter , cut into 1/4-inch cubes
1/3 cup water
2 hard-cooked eggs , each cut into 8 wedges lengthwise
6 pitted green olives , quartered

First prepare the filling in the following fashion: In an 8- to 10-inch skillet, combine the onions, oilive oil and 1/2 cup water, and boil over high heat until the water is completely evaporated. Add the meat and cook, stirring constantly, until it is browned on all sides. Stir in the raisins, chili, paprika, cumin, salt and a few grindings of pepper. Set the filling aside.

Preheat the oven to 400 deg. To make the dough, combine the flour, salt and butter in a large bowl. Use your fingers to rub the flour and butter together until they blend and look like coarse meal. Pour the water over the mixture all at once and gather the dough into a compact ball.

Roll the dough out on a lightly floured surface, making a rough circle about 1/8 inch thick. As you roll, lift up the dough from time to time and sprinkle a light dusting of flour under it to prevent the dough from sticking. With a cookie cutter 5 inches in diameter or an empty can of similar size, cut out 5-inch circles. (Or using a plate or saucer 5 inches in diameter as a pattern, cut out the circles with a knife or pastry wheel.) Gather the scraps of dough together into a ball and roll out again. Cut out similar 5-inch circles.

Place about 1 1/2 tablespoons of the meat filling in the center of each circle, leaving at least 1/2 inch of dough exposed around it. Top the filling with 1 piece of egg and 2 pieces of olive, and moisten the exposed dough with a finger dipped in water. Fold the empanada in half to form a crescent, and press the edges firmly together. Following the pictures opposite, shape the edges of the empanadas. Arrange the finished empanadas on an ungreased baking sheet. If they must wait, cover them with aluminum foil or plastic wrap and refrigerate them.

Spaghetti Florentine

Candace made this dish tonight for dinner--super good! I think it would be even better with a little more seasoning, maybe something like Mrs. Dash or Garlic Salt; just to give it a kick. She sided it with garlic bread, my favorite!

Spaghetti Florentine

  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning, crushed
  • 1 (10.75 ounce) can Campbell's® Healthy Request® Condensed Cream of Celery Soup
  • 1/8 teaspoon ground black pepper
  • 1 (10 ounce) package frozen chopped spinach
  • 1 cup plain nonfat yogurt
  • 1 medium tomato, diced
  • 4 cups hot cooked spaghetti, cooked without salt
  • 2 tablespoons grated Parmesan cheese

1. Spray saucepan with vegetable cooking spray. Heat over medium heat 1 min. Add onion, garlic and Italian seasoning and cook until tender.
2. Add soup, pepper and spinach. Heat to a boil. Reduce heat to low. Cover and cook 10 min. or until spinach is tender.
3. Add yogurt and tomato and heat through. Toss with spaghetti. Sprinkle with cheese.
